Actually it is spelled out in Deuteronomy 14:2.  Soooo, as a simple example, let us say, a coach is choosing a captain for a team, does he do it at random? What if he did, and picked the least motivated player, remember, at random, not to show favouritism? A good idea? Probably not.
    So, back to choosing the Jews, not just because God loved them, but also for their ability to bring the 'rest of humanity' into His circle of love, etc... Now, as a non-Jew, how would you feel not being chosen, or the Jews being the ones being chosen? Also, how do Jews feel being 'the chosen people of God'?  
     As far as 'we do not seek all peoples to be Jewish, but through what we bring to the world, etc etc..., '  is simply saying that 'we are the special chosen people of God'.

Deuteronomy 14:2 1599 Geneva Bible 

2 For thou art an holy people unto the Lord thy God, and the Lord hath chosen thee to be a precious people unto himself, above all the people that are upon the earth.

We all need to be saved from having to spend our eternity in God's lake of fire, because that's a fate we ALL deserve.
So be SAVED and believe that God LOVES us so MUCH that He manifested Himself on earth as the Lord JESUS Christ who shed His sinless blood for the forgiveness of our sins, who was buried and rose from the dead, three days later, 1 Corinthians 15:1-4.
